Salmon burger with green olive pate, courgettes and spirulina mayonnaise

Ingredients for 4 burgers:
2 courgettes
4 salmon burgers
Green olive pate as much as you like
Oil to taste
Salt to taste

For the mayonnaise:
2 egg yolks
Oil to taste
1 lemon or two tablespoons of white vinegar
salt to taste
Spirulina Spireat powder to taste


Fry/cook the courgettes in a pan with a drizzle of oil.
Cook the salmon burgers.
Toast the bread.
Prepare the mayonnaise by emulsifying the eggs with the oil, adding the lemon or vinegar, salt and spirulina Spireat.
Assemble the sandwich by placing the bread with olive paté at the base, on top of it the salmon burger, courgettes, spread the bread with mayonnaise and put it on the top.
